Dry Samosa is a wonderful snack which can be served in birthday parties. I have made vegetable samosa many times but this time I gave a try to dry samosa, and its really good.
All purpose flour/ maida - 2 cups
Oil for frying
Grated coconut -1/2 cup
1. Take maida flour in a broad vessel, add salt mix well, then add water little by little and make dough like roti dough & keep it aside.
2. In a frying pan, add 2 tbsp of oil. Fry fennel seeds, grated coconut nicely until the fried coconut aroma comes. Then add cashews, almonds, dry grapes, tumeric powder, chilli powder, asafoetida, sev podi, salt and fry for 5 mins. If you have dried raw mango then add that too. After frying remove it from the flame.
3. Now take the dough, make balls out of it and then flat it and make a round shape like roti. Then cut the roti into two halves. In one half, stuff one tbsp filling then fold the end and make a samosa triangle. Seal the corner nicely with water.
4. In a heavy bottom pan, deep fry the samosa and serve. This dry samosa can be stored for more than a week.
